Another baking post for you. I have made Raspberry Curd and Fudge Cupcakes which taste amazing :)
What you will need:
- Cupcake Cases (10)
- Muffin Baking Tray
- Mixing Bowl (Large)
- Electric Mixer
- Many Spoons ha :)
- Self Raising Flour (10 oz) or (285 grams)
- Caster Sugar (5 oz) or (144 grams)
- Sunflower Spread (5 oz) or (144 grams)
- Eggs x 2
- Tablespoon of Olive Oil
- Raspberry Curd
- Raspberry Fudge
- Pink Food Colouring
- A cupcake corer (I think thats what it's called but you'll see it later)
The next few steps are the same as the Easter Nest Cupcakes
Pre heat your oven at 180 degrees or gas mark 4
Step one - Weigh out your dry ingredients and place into a mixing bowl.
Next crack two eggs into the bowl - it should like this!
Mix all your ingredients together until they look like this...
Now add the pink colouring, I over add on this because when its cooked it fades a bit.
Add this to your cupcake cases - Fill up to 3/4 of the case.
Leave in the oven for 15 - 20 minutes.
20 minutes later......
For the filling you will need to get the following ready:
Use the cupcake corer to cut a hole in the cupcake - big enough to fit a tea spoon full of raspberry curd in.
Spoon a reasonable amount of curd into the hole and add the raspberry pieces of fudge on top. I guess this can be done with any curd depending on what you like.
And you're finished..... Yummmy in my tummmmy!!!! :)
